Low Calorie Pumpkin Pie
Ingredients
16-oz. can solid packed pumpkin
2 Tbsp. sugar
13-oz. can evaporated skim milk
8 packages sugar substitute (16 tsp. to 1/3 C.)
1 egg
2 tsp. pumpkin pie spice
2 egg whites
2 tsp. vanilla
1/2 C. biscuit mix (like Bisquick)
Cooking Instructions
Heat oven to 350 degrees F. Lightly grease or spray a 9-inch pie pan with vegetable pan spray. Place all ingredients in blender, food processor or mixing bowl. Blend 1 minute, or 2 minutes with mixer. Pour into pie pan. Bake 50 minutes or until center is puffed up.
