Linguini Primavera
Ingredients
2 C. chopped broccoli
1 C. julienne carrot strips
1 med. onion, cut into wedges
1 tsp. Italian seasoning
2 cloves garlic, crushed
1/4 tsp. ground black pepper
2 Tbsp. margarine
1 lg. tomato, chopped
1 lb. linguini, cooked & drained
8 oz. egg substitute
1/4 C. Parmesan cheese
Cooking Instructions
In large skillet, over medium heat, cook broccoli, carrots, onion, Italian seasoning, garlic and pepper in margarine for 3 to 5 minutes, stirring occasionally. Add tomato, cook 1 minute more or until vegetables are tender crisp. Toss with hot linguini, egg substitute and cheese. Serve immediately. Preparation Time: 20 to 30 minutes. 8 servings. Great main dish or side dish. Low calorie, low fat and cholesterol. Quick and easy. Vegetarian.
