Lenten Special Fish Bake
Ingredients
Fish fillets
Mushrooms, fresh or canned
Lemon juice
Mayonnaise
Sliced scallions
Salt & white pepper
Paprika
Cooking Instructions
Spray baking dish with Pam and lay fillets over it in a single layer. Put mushroom slices over each fillet, then sprinkle about 1 teaspoon lemon juice over each fillet. Now cover each one with mayonnaise. Dot this layer with about 1 tablespoon sliced scallions per piece. Sprinkle top layer with salt, pepper and paprika. Bake in 400 degree oven for 15-20 minutes until fish is opaque in color and flakes easily. Serve with small boiled potatoes rolled in melted butter and chopped parsley.
