Lemon Filling
Ingredients
1 tsp. unflavored gelatin (1/3 envelope)
2 tsp. lemon juice
1 egg yolk
1 tsp. lemon peel
1/2 C. diet lemon soda
artificial sweetener to equal 6 tsp. sugar
Cooking Instructions
Soften gelatin in lemon juice. Combine remaining ingredients with wire whip. Blend well and stir over low heat to avoid sticking, until mixture thickens. Pour into tart or pie shell.
