Ingredients

1 C. Flour
1 C. Cornmeal
1 tsp. Soda
1 tsp. Baking powder
1/2 C. Sugar
1/4 C. Shortening
1 C. Buttermilk
1 Egg
2 C. Carrots, shredded
1 C. Pineapple-crushed

Cooking Instructions

Cream sugar and shortening together, add egg, buttermilk, and dry ingredients. Then add carrots and pineapple. Place in greased and floured crock pot baking pan. Cover and cook on high for 2 to 3 hours.
