Italian Chicken
Ingredients
Pam or other vegetable spray
4 large boneless skinless chicken breasts
1 can mushroom pieces drained
1 can artichoke hearts drained
1 bunch green onions chopped
Sauce:
1 Tbsp. quick-cooking tapioca
2 Tbsp. fresh lemon juice
1 tsp. dried oregano
1 tsp. garlic powder
1 envelope low-sodium chicken bouillon
1/3 C. low-calorie Italian salad dressing
1/2 C. white wine
1 tsp. Worcestershire sauce
Cooking Instructions
Spray crock pot inside with vegetable spray. Place drained mushrooms, drained artichoke hearts and chopped green onions in bottom of crock pot. Sprinkle vegetables with a heaping Tbls. of quick-cooking tapioca and 1 envelope of chicken bouillon. Combine remaining sauce ingredients and pour on top of chicken and vegetables. Cover and set crock pot on high. Cook 5- 6 hours or until tender. The tapioca thickens the sauce while it cooks.
