Homemade Banana Layer Cake
Ingredients
2 C. all-purpose flour
1 1/2 C. sugar
1 1/2 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. salt
1 C. ripe banana; mashed (3 medium)
1/2 C. buttermilk or sour milk
1/2 C. shortening
2 eggs
1 tsp. vanilla
Cooking Instructions
Grease and flour two 9 x 1-1/2-inch round baking pans; set aside. In a large mixing bowl combine flour, sugar, baking powder, baking soda and salt. Add banana, buttermilk or sour milk, shortening, eggs and vanilla. Beat with an electric mixer on low speed until combined. Beat on medium speed for 3 minutes. Pour into prepared pans. Bake in a 350 degree oven 30 minutes or till a toothpick inserted near center comes out clean. Cool on wire racks 10 minutes. Remove from pans; cool completely on racks. Sauce: Boil sugar and water until soft ball stage. Remove from heat and add rum. Pour sauce over cake and before all the liquid is absorbed, sprinkle with almond or coconut.
