Harvard Beets
Ingredients
4 C. beets, diced and cooked
1/2 C. sugar
1 Tbsp. cornstarch
1 tsp. salt
1/4 C. vinegar
1/4 C. water
2 Tbsp. butter
Cooking Instructions
Mix the sugar, salt, and cornstarch. Add vinegar and water. Stir until smooth. Cook for 5 minutes on medium heat. Add beets to hot sauce and let stand for 30 minutes. Just before serving, bring to a boil and add butter. (Omit salt when using canned beets which have had salt added.)
