Halibut Creole
Ingredients
1-1/4 to 2 lb. halibut steaks, or cod
salt, to taste
freshly ground pepper, to taste
3 large tomatoes, peeled, seeded, chopped
1/2 C. green pepper, finely chopped
1/2 C. onion, finely chopped
6 Tbsp. butter
3 Tbsp. lemon juice
1/8 tsp. Tabasco
Cooking Instructions
Preheat oven to 400 degrees F. Butter a shallow baking dish large enough to hold fish in one layer, and place fish in it. Season with salt and pepper, to taste. Spread tomatoes, green pepper, and onion over top. Melt butter with lemon juice and Tabasco. Drizzle over fish and vegetables. Bake about 25 minutes, basting with pan juices every 10 minutes.
