Grilled Catfish With Red Salsa
Ingredients
8 catfish fillets (about 3 lbs.)
1/3 C. lime juice or lemon juice
1/8 tsp. salt
RED SALSA:
4 lg. tomatoes (fresh or canned), chopped
1/3 C. onion, chopped
1 sm. green pepper, chopped
2 Tbsp. lemon juice
1/4 tsp. salt
1/4 tsp. pepper
1/2 tsp. ground cumin
Cooking Instructions
Place catfish in a large shallow dish. Combine lime juice and stir. Pour over fish. Cover and marinate 15 minutes in refrigerator. Drain fish fillets reserving marinade. Place individual fillets on aluminum foil, spoon 1 tablespoon marinade over top; seal. Place on grill over medium hot coals 7 to 8 minutes each side. If desired, these may be placed in oven and broiled instead. Serve with Red Salsa which has been chilled.
