Greens Galore
Ingredients
10 C. kale, Swiss chard, mustard greens, or a combination
2 medium onions, thinly sliced
2 tsp. olive oil
1/3 C. water
salt and pepper, to taste
1/2 lemon, juice of (optional)
Cooking Instructions
Wash greens well and chop some of stems with leaves. In a large saucepan, cook onions in oil or butter until golden. Add greens and water. Cover and cook over medium heat, stirring occasionally, just until greens are tender. Season with salt and pepper. Sprinkle with lemon juice, if desired.
