Green Beans Southern Style
Ingredients
2 lb. green beans
1 ham hock
2 tsp. salt
1 small hot pepper
Cooking Instructions
Wash the beans, cut off the ends and snap beans in two. Place the ham hock in a large kettle, cover with water and boil for 15 minutes. Add beans, salt, and hot pepper and more water, almost to cover the beans. Bring to a boil, cover and boil for 40 minutes. Add more water if necessary. Turn off heat and let rest for several hours. Simmer for 35 minutes longer before serving. Serve beans with pieces of ham from the hock. Serves 6 to 8.
