German Sauerkraut
Ingredients
5 slices thick lean bacon
2 medium yellow onions, peeled and sliced
3 quarts sauerkraut in glass jars, or fresh, drained and lightly rinsed
1 Tbsp. brown sugar or sugar substitute
1 C. dry white wine
1 bay leaf
12 whole juniper berries, or 2 tsp. caraway seeds (not both)
freshly ground black pepper, to taste
1 C. grated peeled potatoes (optional)
Cooking Instructions
Place all of the ingredients in a heavy kettle. Cover and simmer gently 1-1/2 to 2 hours.
