Gazpacho Salad
Ingredients
1-1/2 C. tomato juice
1 package (4-serving size) Jell-O Brand Lemon Flavor Sugar Free Gelatin
1 C. finely chopped tomato
1/2 C. finely chopped peeled cucumber
1/4 C. finely chopped green pepper
2 Tbsp. finely chopped red pepper
2 Tbsp. sliced green onions
2 Tbsp. vinegar
1/4 tsp. black pepper
1/8 tsp. garlic powder (optional)
Cooking Instructions
Bring tomato juice to a boil in small saucepan. Completely dissolve gelatin in boiling tomato juice. Chill until slightly thickened. Combine remaining ingredients in medium bowl; mix well. Stir into gelatin mixture. Pour into individual dishes or medium serving bowl. Chill until firm, about 3 hours.
