Frozen Nectarine Yogurt
Ingredients
3-1/4 small nectarines, chopped
2/3 C. water
2 Tbsp. honey plus 2 tsp.
2 tsp. fresh lemon juice
3/4 tsp. vanilla extract
2 Tbsp. unsweetened apple juice plus 2 tsp.
2/3 C. plain low fat yogurt
Cooking Instructions
Combine nectarines, water, and honey in a saucepan. Cook over medium heat until the nectarines are soft. Puree mixture in a blender or food processor. Stir in lemon juice, vanilla, and apple juice. Chill until cool. Whisk yogurt into nectarine mixture. Pour into an 8 by 8 inch pan and freeze until crystals form around the edges, about 45 minutes. Stir crystals into middle of the pan, and return to freezer. When mixture is lightly frozen through, whip it until it is light in color. Spoon mixture into a storage container and freeze until firm. Let soften at room temperature for 10 minutes before serving.
