Fried Plantains
Ingredients
3 firm plantains
1 C. peanut oil
salt
Cooking Instructions
Peel the plantains and cut them into 1/4″ rounds or smaller. Heat the oil until it is very hot and fry the plantain rounds, a few at a time, like deep-fried potatoes. When crisp and brown, drain on paper towels. While hot, sprinkle with salt. Serves 6 to 7.
