Fried Parsnips
Ingredients
8 medium parsnips
4 Tbsp. butter
2 Tbsp. flour
1/2 tsp. salt
1 tsp. sugar
Cooking Instructions
Scrape parsnips and cut in halves lengthwise. Steam for 45 minutes; this will retain the delicate flavor. Dip in melted butter and then in flour and fry in butter. Let them come to a delicate brown and sprinkle with salt and sugar. Serves 6.
