Fried Catfish
Ingredients
2 lbs. pan dressed catfish
1/2 C. yellow cornmeal
1/2 C. all-purpose flour
1 tsp. salt, optional
1/4 tsp. pepper
Vegetable oil
Cooking Instructions
If fish fillets are large, cut into serving size pieces. Combine cornmeal, flour. Heat vegetable oil (1/2 inch) in skillet until hot. Fry fish in hot oil over medium heat, until golden brown on both sides, turning carefully, about 10 minutes. Makes 6 servings.
