Fish Roe Patties
Ingredients
2 C. leftover mashed potatoes
1/2 C. flour
1/2 lb. fish roe (eggs)
1 egg
1 green onion (chopped fine)
1/2 tsp. salt and pepper (or to taste)
Vegetable oil
Cooking Instructions
In a bowl, mix potatoes, flour, fish roe, egg, onion, salt and pepper thoroughly until combined. If mixture is too stiff, add 1/4 cup milk. Form into small patties. Put a thin coat of vegetable oil in large skillet and heat over medium high heat. Brown patties on both sides, turning carefully.
