Fish Fillets Florentine
Ingredients
1 lb. fresh spinach
1 1/2 lb. fillets (flounder, whiting)
3 Tbsp. lemon juice
Salt and pepper to taste
1/2 C. water
1/2 C. milk
2 Tbsp. instant blending flour
1 Tbsp. parsley, minced
Pinch of nutmeg
6 Tbsp. grated Parmesan cheese
Cooking Instructions
Wash and trim spinach and place in pan. Cover and cook 2-3 minutes. Drain well. Arrange fish in single layer in baking dish. Sprinkle with lemon juice, salt and pepper, and water. Cover with foil and bake at 350 degrees for 5-7 minutes. Drain liquid into a saucepan and heat to a boil. Combine milk and flour and stir into liquid. Cook, stirring constantly until it thickens. Stir in parsley, nutmeg and season to taste. Arrange fish in center of a baking pan; surround with spinach. Pour sauce over all and sprinkle with cheese. Run under broiler until bubbly. Serves 6.
