Escalloped Potatoes
Ingredients
6 C. potatoes, sliced
3 Tbsp. butter
1 tsp. salt
2 Tbsp. onion, chopped (optional)
3 C. light cream
2 Tbsp. flour
pepper to taste
1 tsp. parsley (optional)
Cooking Instructions
Make a white sauce of butter, flour, and milk. Place half of the potatoes in a greased casserole and cover with half of the sauce and seasonings. Add remaining potatoes and seasonings, then remaining sauce. Cover and bake at 400° for about 1 hour. Uncover and continue baking until top forms a brown crust and potatoes are done.
