Easy Chicken Creole
Ingredients
1 C. chopped onion
1 clove garlic, crushed
2 Tbsp. flour
2-1/4 C. chicken broth
1/4 tsp. sugar
black pepper to taste
1 medium bell pepper, diced
3 Tbsp. oil
1 can tomato paste (6-oz.)
1/2 tsp. salt
1/4 tsp. Tabasco sauce (or to taste)
2 C. cooked, cubed, chicken
Cooking Instructions
Saute onion, green pepper and garlic in oil until tender, stirring occasionally. Add flour, stir just until flour starts to brown. Stir in tomato paste, broth, salt, sugar and Tabasco sauce. Cook and stir until mixture comes to boil and thickness. Stir in chicken and black pepper. Simmer uncovered for 5 minutes or until chicken in heated through. Serve over hot cooked rice.
