Diet Taco Burgers
Ingredients
1 egg, beaten
1 can (16 oz.) tomatoes, undrained, cut up
3 Tbsp. wheat germ
2 Tbsp. onion, finely chopped
2 Tbsp. can green chili, chopped
3/4 to 1 lb. hamburgers
2 tsp. corn starch
1/4 tsp. cumin
Few dashes hot pepper sauce
1 sm. head lettuce, coarsely shredded
1/4 to 1/2 C. shredded Monterey Jack cheese
Salt and pepper
Cooking Instructions
In a bowl combine egg, 2 tablespoons of the undrained tomatoes, wheat germ, onion, 1/2 the canned green chili and 1/2 teaspoon salt. Add hamburger and mix well. Shape meat mixture into patties. Place patties on rack of a broiler pan. Broil 3 cinches from heat. Allow about 10 minutes. Total broiling time for medium doneness (or grill patties over medium coals). Cook 12 to 15 minutes total cooking time for medium. Meanwhile in saucepan, stir together remaining undrained tomatoes, remaining canned green chili, corn starch, cumin and hot sauce. Cook and stir until mixture is thickened and bubbly. Cook and stir 2 minutes more. To serve, place a patty on a bed of shredded lettuce; top with some of the tomato mixture and Monterey Jack Cheese.
