Date Cake Squares
Ingredients
1 C. chopped dates
3/4 C. chopped pitted prunes
1/2 C. dark raisins
1-1/4 C. water
8 Tbsp. margarine, cut into pieces
2 eggs
1 tsp. vanilla
1 C. all purpose flour
5-1/2 tsp. Equal-Measure, or 18 packages Equal sweetener
1 tsp. baking soda
1/4 tsp. salt
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 C. chopped walnuts
Cooking Instructions
Combine dates, prunes, raisins, and water in medium saucepan; heat to boiling. Reduce heat and simmer, uncovered, until fruit is tender and water is absorbed, about 10 minutes. Remove from heat and add margarine, stirring until melted. Cool. Mix eggs and vanilla into fruit mixture. Mix in combined flour, Equal-Measure, baking soda, salt, cinnamon and nutmeg. Spread batter evenly in greased baking dish, 11 by 7 by 2, and sprinkle with walnuts. Bake in preheated oven at 350 degrees F. until cake springs back when touched lightly, 30 to 35 minutes. Cool on wire rack. Cut into squares.
