Curried Lentils With Spinach
Ingredients
1 C. lentils
1 Tbsp. olive oil
2 each garlic cloves minced
1/2 pound spinach leaves, washed stemmed and chopped
14 ounce can plum tomatoes
2 Tbsp. tamari
2 tsp. curry powder
1/4 tsp. grated ginger
1/4 tsp. cinnamon
1/4 tsp. nutmeg
Cooking Instructions
Wash lentils. Cook till tender but firm. Heat olive oil in large pot and when hot add garlic. Saute for 1 minute. Add spinach leaves and steam till they wilt. Add lentils and rest of ingredients. Cover and simmer for 15 minutes. Serve over rice.
