Cucumber And Mint Salad
Ingredients
6 C. cucumbers, sliced
1 small green bell pepper, diced
3 green onions, sliced
1/4 C. minced mint
1/4 C. lemon juice
1 Tbsp. olive oil
2 Tbsp. balsamic vinegar
fresh ground pepper
1 dash salt (optional)
Cooking Instructions
Combine cucumbers, peppers, onions, and mint in a salad bowl. In a separate bowl, whisk together remaining ingredients. Toss with vegetables, and serve.
