Cranberry Nut Bread
Ingredients
1 C. whole wheat flour
1 C. unbleached all purpose flour
1/4 C. sugar
1 Tbsp. baking powder
2 tsp. orange, rind grated
1 C. orange juice
2 Tbsp. vegetable oil
1 egg
1 C. cranberries, fresh, frozen, chopped
1/3 C. raisins
1/3 C. walnuts, chopped
Cooking Instructions
Combine the flours, sugar, baking powder, and orange rind in a mixing bowl. Add the remaining ingredients, and stir to blend well. Pour into an oiled 9 by 5 inch loaf pan. Bake at 350 degrees F. for 45 to 50 minutes. Cool 6 minutes before removing from pan. Cool thoroughly on a wire rack. Store in a plastic bag or aluminum foil at least 1day before slicing.
