Cottage Cheese Cookies
Ingredients
1 C. whole wheat flour
1/4 C. nonfat powdered milk
2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. salt (optional)
1/4 C. bran
1/4 C. wheat germ
1/2 C. raisins
1/4 C. reduced calorie margarine, softened
1/2 C. low fat cottage cheese
1/4 C. sugar
2 Tbsp. honey
1/4 C. egg substitute
1 tsp. vanilla
Cooking Instructions
Sift the flour, dry milk, baking powder, cinnamon, nutmeg, and salt. Add bran, wheat germ, and raisins. In a large mixing bowl, beat margarine and cottage cheese until smooth. Add the sugar and honey; beat until fluffy. Add egg substitute and vanilla; beat mixture again. Stir reserved flour mixture into the cottage cheese mixture until just blended. Drop dough by the rounded teaspoonfuls about 2 inches apart on cookie sheets coated with nonstick vegetable cooking spray. Bake at 350 degrees F. for 8 to 10 minutes, or until the edges of the cookies turn golden. Remove cookies from the pan to a rack to cool.
