Cornbread
Ingredients
2 C. cornmeal
1/2 tsp. salt
1/2 tsp. baking soda
2 tsp. baking powder
1 Tbsp. sugar, or honey
1 egg
1 Tbsp. vegetable oil
1 C. buttermilk, or sour milk (1 C. low fat milk plus 1 Tbsp. vinegar)
Cooking Instructions
Combine the cornmeal, salt, baking soda and baking powder in a bowl. Mix well. Pour into a lightly oiled 8-inch-square baking pan. Bake at 400 degrees F. for 20 to 25 minutes.
