Cherried Sweet Potatoes
Ingredients
1 large can sweet potatoes with liquid
I small can cherry pie mix
1/4 C. of concentrated frozen orange juice
3 Tbsp. butter
1/4 C. of any kind of dark syrup ( Karo or pancake for example)
or 1/4 C. brown sugar.
salt and pepper
large pinch of cinnamon
1/4 C. of blackberry brandy
Cooking Instructions
Drain the liquid from the sweet potatoes into a saucepan. Put the sweet potatoes aside. Add all the rest of the ingredients into the pan. Put it on to simmer on low heat until the sauce thickens. This will take a half hour or more. Watch so it doesn’t burn, stirring occasionally. Add the sweet potatoes to the sauce and heat them through. Note: This may be made the day before and heated in the microwave.
