Carrot Pineapple Cake 2
Ingredients
2 C. sugar
3 eggs
1-1/2 C. vegetable oil
2 tsp. vanilla
2 tsp. baking Soda
1 tsp. cinnamon
1 tsp. salt
3 C. flour
2 C. grated carrots
3 C. flaked coconut
13 ounce can of crushed pineapple ( with juice )
1 C. chopped nuts ( walnuts or pecans)
Cooking Instructions
Cream sugar, eggs and oil together. Add vanilla. Mix the soda, cinnamon, salt and flour and add to sugar mixture. Mix thoroughly; add carrots, coconut, pineapple and nuts and mix together. Pour into greased and floured 9 inch x 13 inch pan. Bake at 300 for 90 min. or until done.
