Carrot Cake Muffins Treats
Ingredients
1-1/2 C. whole wheat flour
2 Tbsp. vegetable oil
1 tsp. baking soda
1/4 C. raisins
1 Tbsp. baking powder
1/4 C. chopped walnuts
1 tsp. ground cinnamon
1/3 C. low fat milk
1/4 tsp. ground nutmeg
8 oz. canned pineapple, unsweetened, crushed
1/4 tsp. ground ginger
1-1/2 C. grated carrots
1 egg
Cooking Instructions
Combine the dry ingredients in a bowl. Add the remaining ingredients and stir to blend. Spoon into oiled muffin tins or paper muffin C.. Bake at 350 degrees F. for 20 to 25 minutes.
