Caldillo
Ingredients
2 pound pork or beef
2 Tbsp. oil
3 potatoes
1/2 C. onion
1 garlic cloves crushed
2 tsp. salt
1 oz. green chilies diced
Cooking Instructions
Cube meat, sprinkle with salt, and fry until brown in oil. Transfer browned meat to the crock pot. Dice potatoes and add to browned meat, slice onions and add garlic, salt, chilies and enough water to cover. Cook on low for 4 to 5 hours. Continue to add water if necessary. It will have a soupy consistency.
