Cajun Roast Chicken
Ingredients
2 Tbsp. butter
1/2 tsp. paprika
1/2 tsp. dried thyme
3 lb. chicken
2 garlic cloves
1/2 tsp. dried basil
1/2 tsp. cayenne pepper
salt
Cooking Instructions
Heat oven to 400. Melt the butter. Mince the garlic. Combine the melted butter, the garlic, 2 tsp. salt, the paprika, basil, thyme and cayenne. Brush the entire chicken with the butter mixture and put it in a roasting pan. Roast until done, for about 1 hour 15 minutes. Tent with foil if the chicken browns too much. Let stand for 15 minutes before carving. Serve with the pan juices.
