Buttermilk Biscuits
Ingredients
1/4 C. soymilk
2 Tbsp. lemon juice
8 ounces silken tofu, firm
2 Tbsp. white miso
2 C. all purpose flour
1 tsp. baking powder
1 tsp. baking soda
Cooking Instructions
Preheat oven to 450 degrees and oil baking sheets. Combine soy milk and lemon juice and let stand for 5 minutes. Blend tofu until smooth and then blend in the soy milk/lemon juice mixture along with the miso. Set aside. Sift together the dry ingredients and fold into the blended mixture. Turn onto a lightly floured surface and form into a ball. Roll out dough to a 1/2 thickness. Cut with a cookie cutter. Put on baking sheets and bake for 12 minutes or until golden.
