Breakfast Burrito 4
Ingredients
8-10 tortillas
FILLING:
4 med. potatoes
1 (12 oz.) sausage
4 eggs
GREEN CHILE:
1 lb. hamburger meat
2 Tbsp. flour
2 C. water
1 clove garlic, mashed
2 C. green chile, chopped
Salt to taste
Cooking Instructions
Boil, peel and cube potatoes. In a frying pan crumble and cook sausage. Add well beaten eggs. When eggs are almost cooked, add and mix potatoes and continue cooking until done. Fill each warmed tortilla (warm one at a time) with about 2 tablespoons of filling and roll by folding two ends first and then roll the other 2 ends. Place in center of plate and top with green chile. Burrito may be wrapped in wax paper and frozen. GREEN CHILE: Cook hamburger meat in a frying pan. Add flour and continue to brown while stirring. Add chile, water, garlic and salt. Cook for 10 minutes. Pour over burrito and serve.
