Best Black Walnut Apple Cake
Ingredients
4 C. coarsely chopped apples
2 C. sugar
2 eggs
1/2 C. vegetable oil
2 tsp. vanilla
2 C. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 C. chopped black walnuts (optional)
Cooking Instructions
Preheat oven to 350. Grease and flour 9 inch x 13 inch x 2 inch. oblong pan. In mixing bowl, combine apples and sugar; let stand approx. 1 hour in separate bowl, beat eggs slightly, add oil and vanilla; set aside. In large mixing bowl, combine sifted flour, baking soda, cinnamon, salt; stir into egg mixture alternately with apple-sugar mixture. Stir in walnuts Pour into pan; bake 1 hour (or until cake tests done). Let stay in pan until quite cool; turn out on rack to complete cooling. Frost with Lemon Butter Frosting and decorate with black walnut halves, if desired. Cut into squares to serve.
