Baked Sour Cream Potatoes
Ingredients
4 C. peeled potatoes, sliced or cubed and cooked,
1/2 C. chopped onion
2 Tbsp. butter
1/4 C. bread crumbs
1/4 C. grated cheese
2 beaten eggs
1 C. sour cream
1 tsp. salt
dash pepper
Cooking Instructions
Put the prepared potatoes in a buttered 1 qt. casserole. Simmer the onion in butter. Sprinkle the onion, bread crumbs and cheese over the potatoes. Combine the eggs, sour cream, salt and pepper and pour over the potatoes. Top with more grated cheese. Bake at 350° for 25-30 minutes or until thoroughly heated.
