Baked Salmon Salad
Ingredients
1 (7 1/2 oz.) can salmon
1/2 C. chopped celery
1/2 C. chopped green pepper
1/4 C. chopped onions
1/2 C. croutons, crushed
1/2 C. grated cheese
1/2 C. mayonnaise
1 tsp. lemon juice
1 tsp. mustard
1/2 tsp. pepper
Cooking Instructions
Drain and flake salmon, reserving 1 tablespoon liquid. Combine salmon with celery, peppers, onion, croutons and the 1/2 cup cheese. Blend together mayonnaise, reserved salmon liquid, lemon juice, mustard and pepper. Turn into small microwave dish, cook, covered on High for 4 minutes.
