Baked Orange Squash
Ingredients
2 C. squash, butternut or acorn, cooked, mashed
1/4 C. frozen orange juice concentrate, thawed
1 dash ground ginger
1/8 tsp. ground cinnamon
1/2 tsp. orange peel, grated
1 Tbsp. reduced calorie margarine plus 1 tsp. reduced calorie margarine
4 tsp. brown sugar, firmly packed
Cooking Instructions
Preheat oven to 375 degrees F. In a medium bowl, combine all ingredients, mixing well. Place mixture in a 1-quart baking dish that has been sprayed with a nonstick cooking spray. Bake, uncovered, 20 minutes.
