Almond And Tomato Bites
Ingredients
1 medium onion finely chopped
1 small clove garlic finely chopped
2 Tbsp. vegetable oil
8 ounces tomatoes skinned and chopped
4 ounces almonds ground or coarsely crushed
6 ounces wholemeal breadcrumbs
Salt and freshly milled black pepper to taste
Freshly chopped parsley to garnish
Cooking Instructions
Saute the onion and the garlic in the oil in a pan until softened. Add the tomatoes and cook for another 5 minutes. Pour the mixture into a bowl and add the almonds and breadcrumbs. Mix well. Season to taste with salt and black pepper. Form the mixture into small, bite size balls. Arrange on serving plate and cover them with masses of chopped parsley.
