Blackened Redfish 1
Ingredients
2 lg. redfish fillets, cut into 3
pieces each
1 C. butter, melted
Cajun seasoning
Cooking Instructions
Heat an iron skillet over high heat approximately 10 minutes (the hotter the better). Dip fillets in butter coating both sides. Cook over high heat approximately 2 to 3 minutes on each side (depending on thickness). (This is a smokey procedures, best if done outdoors; should not be cooked indoors.) Serve with 1/2 cup melted butter.
