Blackcurrant Cheeseless Cake
Ingredients
Oat base
2 ounces soft all vegetable margarine
2 ounces sugar or pear and apple spread
2 1/2 ounces plain wholemeal flour
2 1/2 ounces pinhead oatmeal
Lemon filling
2 medium lemons
1/2 pint concentrated soy milk
2 ounces sugar
1 ounce plain white flour or cornflour
18 ounces plain regular tofu
Cooking Instructions
Heat oven to 350 degrees. Line an 8 inch diameter flan tin with baking parchment. Mix all ingredients together thoroughly. Press into base of tin and bake for 10 to 15 minutes until golden brown. Allow to cool. Lemon filling : Finely grate the zest and squeeze the juice of both lemons. Place lemon zest and juice in liquidizer with remaining filling ingredients. Blend until fairly smooth. Pour filling on to cooked base. Bake at 350 degrees for 20 to 30 minutes, until set.
