2 tsp. baking soda
2 tsp. cinnamon

3 C. confectioner’s sugar
2 Tbsp. lemon juice
2 Tbsp. cold water

Cooking Instructions
Preheat oven to 350. Grease and flour a 9×13-inch oblong pan. In a mixing bowl, combine apples and sugar and let stand for approximately 1 hour. In a separate bowl, beat eggs slightly, then add oil and vanilla; set aside. In a large mixing bowl, combine sifted flour, baking soda, cinnamon, and salt; stir into egg mixture alternately with apple-sugar mixture. Stir in walnuts. Pour into pan and bake for 1 hour (or until cake tests done). Let stand in pan until quite cool; turn out on rack to complete cooling. Frost with Lemon Butter Frosting and decorate with black walnut halves, if desired. Cut into squares to serve. Lemon Butter Frosting: In a mixing bowl, cream butter and add sugar gradually, creaming thoroughly. Beat in lemon juice and enough cold water to make a spreading consistency. Beat in salt. Makes approximately 3 C. of frosting.
