Black Eyed Peas
Ingredients
1 pound dried black eyed peas
2 Tbsp. oil
1 each onion, chopped
1 each bell pepper, chopped
1 each hot chile pepper, minced
2 each tomatoes, diced
6 C. water
1 each bay leaf
1 tsp. dried thyme
1 1/2 tsp. salt
1/8 tsp. black pepper
1 pinch cayenne pepper
Cooking Instructions
Rinse peas; set aside. Heat oil in a large soup pot and sauté onions, peppers and tomatoes until onions are soft and translucent. Add peas, bay leaf, thyme, salt and pepper, and water. Bring to a boil, then reduce heat and simmer, covered, until peas are tender and mixture is slightly thick, adding more water if necessary. Adjust seasonings and serve with rice, passing hot pepper sauce at the table.
