Black Beans And Rice
Ingredients
1 lb. black beans
1 large onion, chopped
1 clove garlic, crushed
1 green pepper, chopped
2 tsp. olive oil
1 tsp. oregano
3 bay leaves
1/2 C. vinegar
2 C. rice, cooked
Cooking Instructions
Wash the beans and soak overnight in quarts of cold water. Sauté the onion, garlic and pepper in the oil. Combine all ingredients, except vinegar and rice, and cook over low heat until the beans are tender. Add the vinegar, and serve over rice.
