Black Bean And Rice Soup
Ingredients
1 medium onion chopped
3 carrots thinly sliced
2 celery stalks thinly sliced
4 garlic cloves minced
1/2 tsp. ground cumin
1 1/2 tsp. dried basil
1/2 tsp. chili powder
1/2 tsp. dried oregano
1/2 tsp. Tabasco sauce
2 cans black beans-16 oz. each drained, rinsed
1 can crushed tomatoes-14 1/2 oz.
2 cans reduced sodium chicken broth 14 1/2 oz. each
1 1/2 C. cooked rice
Cooking Instructions
Combine all ingredients except rice in crock pot. Cover, cook on low 8 to 10 hours high 3 to 4 hours. Add cooked rice before serving.
