Black And White Bean Salad
Ingredients
2 C. red onions, finely chopped
2 Tbsp. olive or vegetable oil
1/3 C. red wind vinegar
1/4 C. chopped red pepper
2 Tbsp. minced parsley
2 cloves garlic, minced
2 Tbsp. NutraSweet Spoonful
1/4 tsp. salt
1/4 tsp. pepper
15-oz. canned great northern beans, rinsed and drained
15-oz. canned black beans, rinsed and drained
Cooking Instructions
Sauté onions in oil in a medium skillet until crisp and tender. Remove from heat and cool until warm. Stir in vinegar, red pepper, parsley, garlic, NutraSweet Spoonful, salt and pepper. Place the beans in a serving bowl, and pour the onion mixture over them. Mix well and serve.
