Birdseed Cake
Ingredients
3 C. all-purpose flour
1 tsp. baking soda
1 tsp. cinnamon
2 C. sugar
1 tsp. salt
1 C. oil
8 ounce can crushed pineapple with juice or 1- 13 1/2 ounces can crushed pineapple,
drained
1-1/2 tsp. vanilla
3 eggs
2 C. bananas, diced
1 C. pecans, chopped
Hummingbird Frosting:
8 ounces cream cheese, softened
8 ounces container whipped topping
1-1/2 C. powdered sugar
Cooking Instructions
Mix all dry ingredients then add remaining ingredients. Mix together, but do not beat. Bake in 350 degree oven – 1 hour and 20 minutes – (Tube pan is prettiest; however, 9″ x 13″ can be used) Hummingbird Frosting: Mix cream cheese and powdered sugar, fold in whipped topping.
