Beet Ring Mold
Ingredients
1 can shoestring beets
1-1/2 C. liquid, beet juice and water
1/4 C. sugar (scant), or sugar substitute to equal 1/4 C. sugar
1/8 C. cider vinegar
1 package (3 oz.) Lemon Jell-O Sugar Free
Cooking Instructions
Drain beets and save juice. Add water to juice to make 1-1/2 cup liquid. Put liquid in saucepan with sugar and vinegar. Bring to a boil. Pour over Lemon Jell-O. Stir until dissolved. Add beets, and place in favorite mold.
